  • I have been developing foods with dehydrated potatoes for decades, and I'm a believer in the versatility and functionality of dehydrated potatoes as an ingredient in food products. My presentation will cover the different types of dehydrated potato products that are out there and how each can be used as a tool in product development, whether that's simple or complex.
  • What will attendees learn from this session?
  • Potatoes are unique as a starch source because of the way potato starch is contained within small cells. I will explain how this can be leveraged in bakery snacks and other products to create a range of desirable attributes in the final food product.
