- My name is Diana Thomas. I've been a sustainability professional for the last decade, and my focus during that time has been implementing sustainability programs, particularly within the commercial food service and organic waste management sectors.
- What topic/trend does this session cover and why is it important?
- So this session is intended to equip commercial bakers with the tools and knowledge to implement sustainability initiatives within their own operations. This is an important topic because sustainability is now a mainstream idea to many. If food waste were a country, it would be the 3rd largest emitter of greenhouse gasses after the US and China. So implementing sustainability initiatives it could be a huge source of big wins, especially for food service operations, not just in greater customer loyalty, but actually savings, long-term savings over time as well.
- What will attendees learn from this session?
- So this is designed to be a high engagement interactive session. Attendees will learn how to develop a sustainability strategy for long-term success, brainstorm opportunity areas where they can immediately start making a difference, and also learn communication strategies to tell the story behind their work and show their efforts to their customers. One important note, this class will be based on US operations because of my personal work experience. International attendees are still encouraged to come and attend the session while keeping in mind that certain ideas may not necessarily apply to their home country.
