• Hi, I'm Mattie Lambert. I'm an associate editor for Avant Food Media and its two publications, Commercial Baking and Craft to Crumb. I have written about sustainability and trends of that nature for over a year.
• What topic or trend does this session cover, and why is it important?
• My session will cover circular economy trends specifically within regenerative agriculture and upcycled foods. It's an important topic for the industry because upcycled foods are a crucial part of helping to solve the issue of food waste. Connected with this, regenerative agriculture restores degraded soils, protects biodiversity, and reverses climate change. With consumers increasingly aware of climate change on food production chains, these two trends are turning into global movements.
• What will attendees learn from this session?
• Attendees will learn how upcycled foods can help reduce the impact of food waste while differentiating products and creating economic opportunity. They will also learn why consumers are increasingly seeking out products made with upcycle ingredients and are even willing to pay more for them.
