- Hi, I am Stefan Bucher, Senior Principal scientist at Ardent Mills. I have 25 years of experience in product development, research, quality, and operations in several food companies. I'm looking forward to my first presentation at IBIE.
- What topic/trend does this session cover and why is it important?
- In my presentation, advancing healthy snacking with extruded ancient grains and pulses, we'll be talking about our research in the extrusion properties of some of our portfolio of flowers. We will be talking about the unique nutritional properties of novel cereals, pseudo cereals, legumes, and seeds. And then get into the extrusion processing properties. We will get into the expansion properties of several chickpea fractions from different varieties, given the interest in high protein and high fiber flowers.

- The objective of this session is to increase your knowledge about ancient grains and other highly nutritious flowers within Ardent Mills portfolio. We will be talking about their nutritional properties and their extrusion cooking performance. Mainly the direct expanded behavior, which would correlate with their suitability to snacking. In the end, we would like you to have one more tool in your R&D box to help you in your future pipeline of healthy products.
